Met een alcoholpercentage van 12,4% is hij perfect als aperitief, bij lichte amuses, visgerechten of desserts met rood fruit. De rijping op latten van 12 tot 18 maanden zorgt ervoor dat het karakteristieke fruit optimaal wordt onthuld, terwijl de suikerdosering tijdens het dégorgement wordt beperkt tot 4g/l voor een zo natuurlijk mogelijke wijn.
